Healthy Eating Update

It’s been a year or so and I’m still continuing on with my healthy eating regiment. I’m trying to eat mostly all vegetarian  meals these days too. As most will remember I had to go back to eating some meat, due to not getting enough protein in my diet. Beans, Soy products, and supplements  were not working for me.

I try to eat any meals with meat as little as possible, though I wish I could find an alternative to get enough protein so I could be completely on a vegetarian diet.  I also eat mostly all organic or home grown fruits, and veggies these days too. I have to say I feel much better and have a lot of energy  too. I also do a lot of cooking at home these days too, rather than going out to eat, since it’s healthier for me to fix my favorite take out dishes. However, I still go out sometimes too hehehe. I also try to get to Places like Trader Joes, Earth Fare, or Whole foods to buy groceries and try my best to buy very little from our local chain stores.

I’ve also have switched from drinking 2 or three sodas a day to only  1 soda a day  with no caffeine. Plus I’m now Interested in drinking  different teas other than  regular “sweet tea”. Plus once in a while I  will have my fav coffee from Starbucks or the  Local place.   Which is a  White mocha or Vanilla Latte  or  White Mocha Frapp,( depends on my mood or season) that is a treat just once in a while or if I need the caffeine if I’m pulling an all nighter for work.

Plus I’m trying to be more active these days from riding my mountain bike to walking ever chance I get. All in all this  healthy living for me is making me feel a lot better than before. Now I wish I started this way of living a long time ago.

Friends are Amazing People to Have!

I have had a lot of friends throughout my life, but only a  few friends have really stood out.

After highschool my best friend of that time really encouraged me to continue with school and go to Community College. After graduating, I knew I could not be able to go to my favorite schools because of lack of funds and grades. I know the school I really wanted to get into was in Canada and at that time that school did not accept scholarships or financial aid from students who were applying from the US. Plus my parents were not too thrilled to send there 19 year old across the country to another state let alone to another country. Then the 4 year schools I really wanted to go  were too much or I would not got in because of my grades. I admit I was not the perfect A student. So that year after highschool My best friend really encouraged me to find something I would love to do and go to the local community college. Which I did and always appreciated  her advice, because without it I would not be where I am today.

Then later on life just two years ago I went through a terrible time with the“wreck” and my current best friend stepped-up as well as her family and just has helped me out so much. I really don’t know what I would have done without them. I had to move a whole house, go through my parents things, go to many dr. visits, and even prepare to bury my parents, which that in itself was a real challenge, but with their help I was able to get through it all and still mange to stay sane through all of it.

See that’s why friends are amazing people to have, because they will always go beyond the call of duty to help you out when you are in need or need encouragement.

Slow for the Weekend

This week has flown by fast. I hope to enjoy this weekend since  I’m starting new projects next week, that will consume my time for a few weeks. I will definitely  enjoy the time off. What to do? I really would love to head up to Asheville for Bele Chere or do something adventurous  like hiking,  but I may end up staying around town too.  There is a ton of things that I would love to do this weekend, but  just have to see what falls into place.

Happy 4th

I had a great 4th of July and hope everyone else did too. Friday night our town did their firework celebration, which from where we live ( right in the city) we can sit on the patio and watch the firework display instead of having to get in the traffic.

Then on saturday,my day started off having lunch with some family who was passing through the area heading to the Mountains. Then as the evening approached T and I grilled out for dinner. All in all it was a great day and officially kicked off the countdown to the beach. We’re headed to the beach in a couple of weeks and I can’t wait. Ready for the salt air, sand and sun.

Memorial Day

Has been a long weekend since Memorial Day on Monday and most of the US has that day off. Tomorrow (despite the rain here), will be filled with cookouts and family outings. I always enjoy Memorial Day as kid, because I knew school would be out soon for summer.

Weird Sleeping

Lately, for me I’ve been on a weird sleeping schedule. I’m either on GMT or PST time zone. Which if I were to fly to either to the West Coast or to London I would not have much jet lag at all, which is good I guess. I have always been a night owl anyhow, and feel more “alive & focused” at night. Plus lately I have been working on a couple of time sensitive projects, which I worked on a lot during the early morning hours. I have found working “3rd shift” helps when working on projects with tight deadlines, since during that time of the day it’s less distraction for me.

Another Adventure & How Time Flies By

This week is flying past. Sunday was Mother’s day and this was the 2nd year without my Mom. All holidays are hard to get through, but I’m finding that I focus on having fun on Holidays helps me get through the day. This Mother’s day was like no other Adventure Sunday for us. We stopped by my parents grave then went onward to have a fun filled evening in Charlotte. We went to a few places around Pineville and Charlotte and ended up in Uptown Charlotte at Trader Joe’s picking up a few things and then heading off to our new favorite French Bakery Amelies’s in NoDa for another late night snack. T had the Portabella Mushroom & leek Tartines and I had a buttered croissant. I also got one of their gourmet cherry sodas. The food and soda was excellent. Before that night I had never heard of Sprecher sodas, but after doing some research they are a local brewery in WI and they also make a wide selection of sodas and beers. Just wish they had a local retailer that sold their sodas in NC. Love to ditch “regular” sodas for those. A lot better than traditional sodas as well them not having any caffeine either.

All and all we had a great time and can’t wait till this Sunday’s adventure night.

Adventure Weekends

I’m having a great week so far, but the weekend was pretty adventurous. On Sunday,Tracy and I went as usual to her dad’s house for supper. After dinner instead of heading home we decided to head to a few places in SC then got an idea to go to Charlotte to go to a few places too. Before we left Charlotte, we wanted to stopped by Amelie’s to have a late night dessert., since they are now open 24/7. I had heard a lot of good things about the French bakery and wanted to try some of their pastries. We got the Apple and Blueberry turnovers, which were really good. We both really want to go back next time we’re in Charlotte to try some of their soups or sandwiches.

Most all of the places that I knew of that stayed open late or even 24/7 are no longer in business, so it’s nice to find another place that does. So many times we have been to Charlotte for events( concerts, musicals, movies, etc) that got out late ( after 10pm) and knew of no place around that was still open to grab a snack or a place that served gourmet types of coffees either. So I’m glad to find something that is open late nights in Charlotte again.

All and All we had a great evening, we got home pretty late, but had lots of fun. I always enjoy our Sunday adventures.
